Domaine Pattes Loup is the carefully managed estate of Thomas Pico, founded in 2004 in Courgis, Chablis. The “Vent d’Ange Mise Tardive” comes from old-vines, low-yielding parcels, wild yeast fermentation and at least 18 months of ageing - part in stainless steel and part in cement eggs. The result is a wine of real depth, intensity and mineral clarity.
